Perhaps because my grandmother (a rare gem of a woman) uses ginger in innumerable dishes, I find ginger a very elegant spice that can dress up the plainest meal of rice and vegetables. I had very little food in the house today, when I made lunch for my in-laws; but with joy I remembered that I had some frozen ginger root that I could use in the rice and vegetables. Here’s a recipe by James Beard (from 1956!) for ginger chicken that is simple and beautiful. Happy cooking!
